A New Barista Champion is Crowned

Monday saw the close of the 2011 World Barista Championship held in Bogota, Columbia and crowned Alejandro Mendez from El Salvador as it’s champion.

Across Twitter Alejandro appeared a favourite and it was a pleasure to see his success. He is the first barista from a coffee producing nation to win the championship, which too, is the first time the World Barista Championship was held in a coffee producing nation.

Alejandro’s signature drink summed up his routine, as it should, showcasing the synergy of his performance.  His philosophy was to incorporate the whole coffee plant of the El Salvadorean Orange Bourbon (Pictured).

The Signature Beverage included;

A tea-like infusion from dried coffee flowers;

A second infusion from dried cascara;  the skin of the coffee cherry;

A third infusion from coffee cherries stripped of the cascara: the beans covered by the ‘pulp’ only.

Alejandro then presented the judges with a combination of washed and unwashed Orange Bourbon espresso, combined with the above infusions. A simple and pure beverage with no need for sweetening or any form of alteration.
